Potatoes

🧄 Garlic Roasted Potatoes

Serves: 4

Ingredients:

  • 2 lbs potatoes (Yukon Gold or red potatoes work best), cut into 1-inch cubes

  • 4–5 garlic cloves, minced

  • 3 tbsp olive oil

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp fresh rosemary or thyme, chopped (optional)

  • 1–2 tbsp fresh parsley, chopped (for garnish)

Directions:

  1. Preheat Oven

    • Preheat oven to 425°F (220°C).

  2. Prep Potatoes

    • In a large bowl, toss potatoes with olive oil, minced garlic, salt, pepper, and herbs (if using). Make sure all pieces are coated evenly.

  3. Roast

    • Spread potatoes in a single layer on a baking sheet.

    • Roast for 25–35 minutes, turning once halfway through, until golden brown and crisp on the edges.

  4. Garnish & Serve

    • Remove from oven, sprinkle with fresh parsley, and serve warm.

Tip: For extra flavor, toss the potatoes with a little grated Parmesan or a squeeze of fresh lemon juice before serving.

🧄 Creamy Garlic Mashed Potatoes

Serves: 4–6

Ingredients:

  • 2 lbs potatoes (Yukon Gold or Russet), peeled and cut into chunks

  • 4–5 garlic cloves, peeled

  • 4 tbsp unsalted butter

  • ½ cup milk or cream (adjust for desired creaminess)

  • Salt & pepper to taste

  • Optional: 2 tbsp sour cream or cream cheese for extra richness

  • Optional garnish: chopped chives or parsley

Directions:

  1. Boil Potatoes & Garlic

    • Place potatoes and garlic cloves in a large pot. Cover with cold water and add a pinch of salt.

    • Bring to a boil, then reduce heat and simmer 15–20 minutes, until potatoes are fork-tender.

  2. Drain & Mash

    • Drain potatoes and garlic well. Return to the pot.

    • Add butter and mash until mostly smooth.

  3. Add Milk & Seasonings

    • Gradually stir in milk or cream until creamy and smooth.

    • Season with salt and pepper to taste.

    • For extra richness, fold in sour cream or cream cheese.

  4. Serve

    • Transfer to a serving dish and garnish with chopped chives or parsley if desired.

    • Serve warm as a comforting side dish.

Tip: For even more garlic flavor, roast the garlic cloves beforehand: wrap in foil with a little olive oil and roast at 400°F (200°C) for 20–25 minutes until soft, then mash into the potatoes.
