Potatoes
🧄 Garlic Roasted Potatoes
Serves: 4
Ingredients:
2 lbs potatoes (Yukon Gold or red potatoes work best), cut into 1-inch cubes
4–5 garlic cloves, minced
3 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp fresh rosemary or thyme, chopped (optional)
1–2 tbsp fresh parsley, chopped (for garnish)
Directions:
Preheat Oven
Preheat oven to 425°F (220°C).
Prep Potatoes
In a large bowl, toss potatoes with olive oil, minced garlic, salt, pepper, and herbs (if using). Make sure all pieces are coated evenly.
Roast
Spread potatoes in a single layer on a baking sheet.
Roast for 25–35 minutes, turning once halfway through, until golden brown and crisp on the edges.
Garnish & Serve
Remove from oven, sprinkle with fresh parsley, and serve warm.
✨ Tip: For extra flavor, toss the potatoes with a little grated Parmesan or a squeeze of fresh lemon juice before serving.
🧄 Creamy Garlic Mashed Potatoes
Serves: 4–6
Ingredients:
2 lbs potatoes (Yukon Gold or Russet), peeled and cut into chunks
4–5 garlic cloves, peeled
4 tbsp unsalted butter
½ cup milk or cream (adjust for desired creaminess)
Salt & pepper to taste
Optional: 2 tbsp sour cream or cream cheese for extra richness
Optional garnish: chopped chives or parsley
Directions:
Boil Potatoes & Garlic
Place potatoes and garlic cloves in a large pot. Cover with cold water and add a pinch of salt.
Bring to a boil, then reduce heat and simmer 15–20 minutes, until potatoes are fork-tender.
Drain & Mash
Drain potatoes and garlic well. Return to the pot.
Add butter and mash until mostly smooth.
Add Milk & Seasonings
Gradually stir in milk or cream until creamy and smooth.
Season with salt and pepper to taste.
For extra richness, fold in sour cream or cream cheese.
Serve
Transfer to a serving dish and garnish with chopped chives or parsley if desired.
Serve warm as a comforting side dish.
✨ Tip: For even more garlic flavor, roast the garlic cloves beforehand: wrap in foil with a little olive oil and roast at 400°F (200°C) for 20–25 minutes until soft, then mash into the potatoes.
